The story began back in 1923. under the leadership of Abbé Balitrand, a number of winemakers decided to join forces to better withstand the economic difficulties of the time. Together, in the heart of the Chablis vineyard in Burgundy, they created a cooperative winery to market their wines. Until the mid 1950s, the members of the cooperative delivered their production to La Chablisienne, which was then responsible for creating the assemblages and for sales, mainly to wholesalers. However, La Chablisienne wanted to go much further and create a style of its own. So it was decided that the harvest would be delivered in the form of must, a particularity that has become the trademark of the house and gives it total control over the winemaking processes. There is a constant exchange of information between the winegrowers and the technicians, linking the quality of the must to the parcels that produced the grapes and ensuring the best possible technical guidance. La Chablisienne, in true pioneer spirit, has never ceased to confront a wide range of challenges in areas as diverse as winegrowing and winemaking, human resources and marketing. It is the meticulous work of all those involved that creates wines which constantly improve with the passage of time.
CHABLIS GRAND CRU, Les PreuseS

- Soil & Sub-Soil: Upper and Middle Kimmeridgian. Alternating limestone and marl with fossilised Exogyra virgula.
- Situation & Exposure: In the village of Chablis, on the right bank of the Serein, up the Chablis Grand Cru vineyards of Bougros. Exposure south-west.
- Vine density per hectare: 5,500 to 6,500
- Average age of vines: 30
- Vignification: Cold settling before fermentation. Both yeast and malolactic fermentations in tanks and small barrels.
- Maturing: 20 months on fine lees, in tanks and small barrels
- Ageing: 8 to 10 years
- Tasting Notes: Luminous wine with pale yellow colouring. A bouquet of vanilla and caramel, possibly as a result of the barrel maturing. The first impression in the mouth is very appealing due to its strength and generosity; this quickly moves aside to allow expression of a great finesse. The minerality is beginning to show but it will need more time to totally liberate itself. In the meantime the oakiness should become less pronounced and the balance of this wine can only become more flattering. Could accompany fish in cream sauce with curry, foie gras or cheese.

- Tasting Notes: Pale yellow colour,the wine is crystal clear and brilliant First the aromas present notes of lightly spiced fresh fruits, when airing, the wine offers more complexity and a hints of flowers and ripped fruits. Nice lenght. Round palate with a fine texture, lightly mineral and an assumed fresh maturity; Really nice volume, fresh and elegant.Surprisingly long tasting Petit Chablis
